Looks better than the score. Gave the Sicilian 6.7 and the round slice a 6.6. The Sicilian was underdone making it seem a bit doughy (saving grace here is the dough was light/airy rather than being heavy, which would have magnified it lacking crisp). A Sicilian slice should have a slight crunch imo. Other deductions were not enough sauce and could’ve also had more cheese. Taste was good though. As far the the traditional slice, again it lacked crisp resulting in too much flop - it should’ve been in the oven a bit longer. Unlike the Sicilian slice, had enough sauce, but similarly could’ve had some more cheese. The taste was there though. One last nit was had flour residue on bottom (this is something that could easily brushed off before being put in the oven. The day after I made some adjustments. I added olive oil to the bottom of both and put both in my oven. One additional chance to the Sicilian was adding sauce (had some already made for pasta a few days ago). This improved both scores as the olive oil gave more crisp(more do to Sicilian). Revised scores: Sicilian 7.4, traditional 7.0. If the aforementioned changes were to be professionally executed, I think upside is 7.5-7.8. May go back later in year to try the grandmas pie. Maybe some other menu items as well….. but not before maki g the rounds to 15-20 other establishments.
