This is a tough one for me. I really want to love Virgil’s. I really do. The owner is a super nice guy who seems like a huge pizza nerd and he’s always tinkering with new things, trying out different ways to level up his pizza game. The dough is fresh, everything seems fresh. I can definitely see the passion behind this. It’s a light, fresh pizza but maybe that’s my problem with it since I grew up on trash pizza with tons of sugar in the sauce and overloaded with an obscene amount of cheese so I’ve acquired a taste for heavy trash pizza. I can definitely see what the fuss is about, but I think it might just be too grown up for me. It comes down to a matter of preference, not quality because the quality is clearly there.

They do have a more traditional round pie as well as a bread pan pizza, but this square-cut Ohio Valley style is their signature approach to pizza so that’s what I went with.
