This is kosher pizza; which means it’s made following the rules of Jewish law. It’s a super soft, doughy, plain-looking pie…nothing fancy whatsoever. Despite a mega soft & undercooked crust, the undercarriage is surprisingly crispy, almost cracker-like. The dough has a rather different flavor than standard pizza dough, along with an interesting texture balance between soft and crispy. There are a significant number of air bubbles breaking out across the surface of the pie, like a teenage pimple outbreak, which isn’t something you see on most standard pizzas. The cheese has a unique taste along with a soft and fluffy texture that reminds me of the kind of cheese blend you’d find on school cafeteria pizza. That’s not to say it’s bad; it’s actually quite tasty. The biggest problem here is the lack of sauce. Scantly spread, this feels like a white pie…uber undersauced. I can’t really distinguish much flavor from the sauce and the amount of grease interferes with what little flavor I could decipher. Despite the dearth of sauce, this pie still has plenty of pizza flavor in the dough and cheese. The kosher aspect isn’t even a factor in the overall flavor, which is surprisingly pleasant considering the lack of sauce. There’s plenty of room for improvement here if they thin out the dough, crisp up the crust and pump up the volume of the sauce. With those adjustments to bolster the score, there’s no reason this pizza couldn’t climb into the 7s.
