Pizza Review
Providence has some very diverse styles of pizza, particularly this rectangular pie from Caserta’s that appears to be a cheesy, thinner version of Sicilian pizza, like a non-traditional grandma style pie without the basil and garlic. The texture and taste is somewhat unique, very different from traditional round football pizza, more similar to a Greek style pie. The cheese is super thick and stringy, definitely gives off Greek style blend vibes. The sauce is splotchy atop the cheese but spread underneath as well. Sweet and tasty, the sauce certainly pops, bursting with flavor, easily the star of the pie, making up for the average-tasting dough and cheese. The dough is decently crispy, fluffy in the middle with a solidly firm undercarriage, along with a buttery crunchy crust, like a combo of Sicilian and Greek style crust. The thickness of the dough and cheese make this a rather heavy pie. Despite being an Italian restaurant, this really tastes like Greek pizza, only better. While not my preference, this is a quality “change of pace” pie, a break from standard football & Neapolitan style pizza. If you’re in Providence, this is certainly worth trying; but I’m not traveling long distances specifically for this pizza.
