I couldn’t stop watching Fredi and his small crew cranking out the pies (and goulash). First impression of the legend was that he deserves every bit of hype he gets. So clearly a hard working, humble business owner that is keeping it all under his watchful eye to ensure it’s up to his standards. He didn’t say much & I didn’t want to distract his rhythm as it was lunchtime and the place was packed, but I was able to thank him quickly & let him know he did not disappoint.
Pizzas were so good, a Portnoy and The Don, along with an order of goulash - delicious and worth the wait, “hands down”. Crispy and airy crust, fresh ingredients that weren’t trying to hide anything. I don’t love most pizza sauce, often ordering pizza with light sauce which also helps to keep the crunch but I wanted to take it as Fredi intended it and very glad I did. I’m still talking about the sauce. It tasted fresh and light, like actual tomatoes straight from the vine. I wish we could talk Fredi into moving to Oakland County but I suspect he’s perfectly happy right where he is and we will gladly make the drive again & again🍕😍
