Southern Connecticut is caught in between 2 legendary pizza cities: New Haven & New York; but Fairfield county has a few gems among the rough. Pizza Post, or as the locals call it, “The Post” is one of those gems that is the model for perfectly cooked pizza. Not too hard, not to soft, yet manages to be both crispy and light. Pretty thin, solidly firm with a unique cracker-like undercarriage that is tremendously crunchy but still manages to taste like pizza dough. The cheese has a sharp taste and is very tight, doesn’t slide at all, almost lacking in ooziness. Really nice zip and bite on the sauce; I wouldn’t mind just a little bit more despite the very solid cheese to sauce ratio. I love the crust, perfect balance of doughy but crispy with terrific oven baked flavor. This is a really terrific pie; if the cheese was creamier and another ladle of sauce was spread on, we could easily be talking about a pizza in the 9s.
