The sauce is delightfully fresh and aromatic, with a pleasantly thin and smooth texture. The cheese melds into the sauce seamlessly. The crust is charred to perfection, yielding a slightly ashy flavor which I love. The crust is rather crunchy-slightly more brittle than I would prefer. The face of the pizza is slightly dry, but it doesn’t take too much away from the glory of this pizza. A slice itself is very light and unassuming to the stomach, which is refreshing. I would recommend the pepperoni, as the flavor of the topping itself compliments the cheese-sauce amalgamation, while simultaneously mirroring the ashy flavor of the crust.
