GREAT first experience overall. The Portnoy is an excellent pie- my first time here, and it definitely impressed. I’d say the sauce, cheese, and maybe some seasoning was the overall win, the crust just gave it a great foundation to crunch through. The bake was aggressive in a good way: ultra-crispy with zero flop, giving it great structural integrity from tip to crust. Personally, I think it could’ve come out of the oven about 30 seconds earlier, or the dough hydration could be nudged up slightly to bring a bit more balance to the crumb. So the only real critique is that the dough leaned a touch tough, especially toward the outer crust. The crust had a bit more hardness than you’d expect—it still needed a little more give on the ends. That said, it was clearly a well-done bake and still delivered as a fantastic overall pizza. Interestingly, another portnoy I saw come out to another table looked slightly different, so there may be some variability between bakes and mine was more done than usual.
