The consistency is almost perfect and carries a mild tang. The mozzarella is very high quality, low-moisture and has excellent salinity and chew. The dough is super crisp with great char and the right amount of burn bubbles on the undercarriage. Sub Score: 7.7 SAUCE: personally, I’d like the sauce to be less sweet, but I can see how people would disagree with me. Not much work needed here! MOZZARELLA: one of the best I’ve tasted yet. Almost perfect in every way. DOUGH: other than being slightly on the thick side, the texture and seasoning are on point. This could use a slight increase in salinity. Summary: this slice got better and better as I ate it. The only deductions were for being a tad bit oily and having slightly thick dough.
