Served in 2 to 3 minutes with a hard North Broadway crisp and no Kensico flop. Sub Score: 6.4 The sauce is decent but a little chunky and thick with good tang and flavor. The mozzarella is decent quality but a tad soupy with mild salinity. The dough recipe was okay but very dense and just bland overall. The undercarriage is over crisped and cardboard like. Sub Score: 6.5 SAUCE: aside from the chunkiness, it is actually pretty decent. If the sauce was thinner with a touch more seasoning this slice could touch the mid 7.0’s MOZZARELLA: either not enough is put on the slice or it’s on the bad side of decent quality. Improve quality and salinity and chew to hit the 7.0’s DOUGH: please start over on the recipe, the dough is either overworked or they’re not using 00 flour.
